Aurora

The dawn of a new day. Aurora is a Greco DOP, with an intense golden yellow color. The aroma is of dried apricot, citrus peel, and honey. The taste is smooth and structured, with high aromatic persistence. Aurora represents the future, the continuation of life, the light seen from the window in the morning.

Harvesting: Manual, in crates, upon reaching full aromatic ripeness of the grape bunches.
Winemaking: The grapes, just harvested, undergo careful and gentle pressing as whole clusters. The free-run must obtained, strictly protected from oxygen, is separated from the press must and clarified by natural settling. Fermentation takes place at controlled temperature entirely in stainless steel wine vats.
Aging: Entirely in stainless steel tanks, through the management of fine lees with regular batonnages for 4 to 6 months. After spending 3-4 weeks aging in the bottle, the wine begins to fully express the fresh and fruity characteristics that are typical of Sannio whites.
Organoleptic characteristics: Intense golden yellow color, aroma is characteristic of dried apricot, citrus zest, and honey. On the palate, it is soft and structured, with high aromatic persistence.
